Dumplings, Lye (Di-Gu-Nv-I)

Ingredients

Corn meal
Wood ash lye
Boiling water

Directions

Mix enough wood ash lye with meal to make it begin to turn yellow. Add enough boiling water to the meal to make a mixture that is easily formed into small balls or pones. Make balls and drop into boiling water and cook until done.

Do not add salt which causes crumbling. Serve hot. Pan drippings can be poured over the dumplings for seasoning.


These are "heavy" dumplings, falling somewhere between the noodle like dumpling of the south and the baking soda dumplings of the north.
