I always mis-understood the term "poke your finger in the curds to check for a clean break" I always poked a straight digit in the curds and then after removal a small depression was left that filled with whey.

I was only after I saw somwhere else, a "crooked finger laid" in the curds and then lifted, that it became clear what the instruction really meant.

Now David has produced these pictures I feel that they should be incorporated in his home page that they are not lost in cyberspace.

Thank you for the clarification....I would imagine from every new cheese maker.
