Somerset Brie Salad

Lean bacon - 3 rashers, rindless
Olive oil - 5 tbsp
Garlic - 2 cloves, crushed
White wine vinegar - 2 tbsp
French mustard - 2 tsp
Fresh plum tomatoes - 6 medium, sliced
Somerset brie - 350 g (12 oz), cut into 8 slices
Fresh basil or oregano - to garnish

METHOD

1.      Fry the bacon until crisp.  Cut into small pieces.

2.      Make the dressing by whisking the oil, garlic, vinegar and mustard in a jug.

3.      Slice the tomatoes in half again.  Arrange the brie and tomatoes in an ovenproof serving dish (a lasagne dish is ideal), sitting upright against each other.  Preheat the grill on medium to hot heat.

4.      Pour half the dressing over the tomatoes.  Place under the grill and cook for about 3 minutes until the brie starts to melt and bubble.

5.      Add remaining dressing, then garnish with the bacon pieces and herbs and serve straight away.
