Poached Pears with Rasberry Sauce

8 med. pears

1/2 tbsp. lemon juice

2 c. apple juice

2 c. water


1) Peel pears, removing core from bottom end but leaving stems intact. Slice about 1.4 inch from bottom of each pear to make a flat base. Set pears aside.

2) Combine next ingredient in a Dutch oven, bring to boil over medium heat. Place pears in an upright position. Cover and simmer for 20 minutes.

3) With a slotted spoon transfer pears to a 10 x 6 x 2 inch baking dish. Put in refrigerator until ready for use.

4) Place pears in individual serving dishes, top with warm sauce.


Sauce:

1/2 c. frozen strawberries

1/2 c. yogurt

3 tbsp. honey

1/4 tsp. vanilla

Heat and serve warm over chilled pears. Optionally, sprinkle toasted nuts or coconut on top.
