How should Hellmann's® Mayonnaise be stored?
Unopened jars of mayonnaise and mayonnaise dressing may be stored at room temperature. Once opened, mayonnaise should be refrigerated to maintain its flavor. Storage temperature affects product quality. High temperatures will accelerate loss of fresh flavor; exposure to freezing or near-freezing temperatures can change the consistency, texture, and thickness.

Can Hellmann's® Mayonnaise or foods prepared with mayonnaise be frozen?
Freezing mayonnaise will break down the emulsion and cause separation and other textural changes. Freezing dishes or sandwiches made with mayonnaise is not generally recommended. The results may not always be successful, depending on the type of recipe and the amount of mayonnaise used. However, baked goods prepared with mayonnaise as the shortening ingredient freeze well.

What does the "Best When Purchased By Date" mean?
The "Best When Purchased By Date" on every jar of Hellmann's® Mayonnaise is the date that the product should be purchased by for the best quality. It allows for a reasonable period of storage and usage (2 to 3 months) after that date. Before and after opening, Hellmann's® Mayonnaise is microbiologically safe to eat for an indefinite period of time.

What is real mayonnaise?
Mayonnaise, as defined by the U.S. Food and Drug Administration's Standard of Identity, must contain at least 65% oil by weight, vinegar, and egg or egg yolks. It may contain spices and natural seasonings except turmeric and saffron, whose yellow color might suggest added egg yolk. Preservatives such as calcium disodium EDTA are acceptable and approved for use in mayonnaise.

Why isn't there a Hellmann's® fat-free mayonnaise?
Initial product formulas have not met the high standards of taste, texture, and performance set by the company and consumers.

What type of vinegar is used in Hellmann's® Mayonnaise? Is it gluten-free?
The vinegar used in Hellmann's® Mayonnaise is distilled vinegar made from distilled alcohol and is gluten-free.

Are the Hellmann's® Mayonnaise jars vacuum sealed?
No, the Hellmann's® Mayonnaise jars are not vacuum sealed. .

What is the difference between Hellmann's® and Best Foods® Mayonnaise?
The products are basically the same. Both trademarks evolved simultaneously - Hellmann's® in the East and Best Foods® in the West. Taste preferences vary; some people find that Best Foods® Mayonnaise is slightly more tangy.

Why does Hellmann's® Mayonnaise contain salt?
Some salt is added to mayonnaise as a flavor enhancer. Most consumers prefer the flavor with salt to the flavor of salt-free mayonnaise. The amount of salt per serving is about 1/16 of a teaspoon, or slightly more than a "pinch."

Why is the sodium level in Hellmann's® Light Mayonnaise and Just 2 Good!® Reduced Fat Mayonnaise Dressing higher than Real Mayonnaise?
The level of sodium for each product is developed individually to meet consumer taste preference. Therefore, each of our products contains the amount of salt/level of sodium that consumers preferred to lower-sodium formulations. Food Safety Tips:

Food safety begins in the kitchen, where food is handled and prepared. To play it safe, follow these tips:

  • Wash hands with soap and warm water before starting to prepare food and between steps.
  • After using knives and other utensils for raw meats, eggs, fish, poultry, and raw vegetables, clean thoroughly, especially before using on other foods. Unclean utensils can spread harmful bacteria.
  • Thoroughly scrub the work surface where raw vegetables or raw meats have been cut or where raw meat juices have dripped.
  • Use clean sponges, dishcloths, and rubber gloves; over-used ones can spread germs.
  • Thaw foods in the refrigerator, not at room temperature.
  • Refrigerate cooked foods such as chicken, potatoes, and ham as soon as they stop steaming. Cooling foods to room temperature before refrigerating encourages bacterial growth.
  • Thoroughly chill all perishable foods before packing for picnics. Pack in coolers with ice.
  • At the picnic site, keep the food and cooler out of direct sun. To reduce traffic in and out of the picnic cooler, pack the food to be eaten first on top.
  • Don't be tempted to carry leftovers home. It's safer to discard perishables.
