Our Famous Creamed Chipped Beef
PREPARATION TIME: 10 MINUTES
SERVES: 4

Cut 1 package of KNAUSS Dried Beef into small pieces, add to 1 tablespoon of melted butter or margarine in a sauce pan. Blend in 4 tablespoons of flour, 2 cups of milk. Cook over medium heat until thick and smooth. Make sure stir consistently while cooking. Serve over toast, baked potatoes or biscuits. Add cooked vegetables if desired during cooking process.

Try serving Creamed Chipped Beef over pancakes, waffles, corn bread, English muffins, rice, hash browns or noodles.

Try this variation. Substitute water in place of milk and prepare as stated above. Serve over mashed potatoes. Makes a great meal.

Beefy Pancakes
PREPARATION TIME: 10 MINUTES
SERVES: Approximately 15 Pancakes

Place 2 cups pancake mix, 1 3/4 cups milk, 1 egg, 2 tablespoons shortening, 1/2 teaspoon mustard in blender. Cover and process until smooth. Add 1 package of KNAUSS Dried Beef in blender. Cover and process until Dried Beef appears finely chopped. The pancake batter is now ready for the griddle. Pour a normal amount of the batter on a lightly greased griddle. Brown on one side, flip and repeat.

Breakfast Soup for a Group
PREPARATION TIME: 10 MINUTES
SERVES: 4 to 6

Put 1 package of KNAUSS Dried Beef, cut into small pieces, and 1 tablespoon butter or margarine in s sauce pan; add 2 cans (10.5 oz. each) condensed cream of potato soup, 10.5 oz. milk (equivalent to one soup can), and 10.5 oz. water. Heat, stirring now and then. Do not boil. Garnish with chopped parsley or pimento.

Variation: Use condensed cream of celery or mushroom soup.

Creamy Eggs & Dried Beef
PREPARATION TIME: 10 MINUTES
SERVES: 4 to 6

In a sauce pan, melt 2 tablespoons butter or margarine over medium heat. Stir in 2 tablespoons flour and 2 cups milk. Stir until sauce is thick and smooth. Reduce heat to low. Add 1 package of KNAUSS Dried Beef, finely chopped, 6 hard-boiled eggs, sliced, and 8 oz. softened cream cheese. Heat for an additional 2 minutes. Serve over toast, waffles, English muffins or bagels.

Egg & Dried Beef Breakfast Pie
PREPARATION TIME: VARIES
SERVES: 4

Here's a simple dish that never fails to delight. Line a pie pan with pastry, sprinkle with 1 package of KNAUSS Dried Beef, snipped. Break eggs on top, season with pepper. Then sprinkle with more Dried Beef. Top with pastry, and flute the edges. Bake in preheated hot oven (400°) until crust is brown. Serve hot or cold.

Eggs Benedict
PREPARATION TIME: VARIES
SERVES: 3-6

Prepare 1 package hollandaise sauce. Melt 1 tablespoon butter in pan and sauté or frizzle 1 package KNAUSS Dried Beef. Toast 3 english muffins and butter. Place 1 to 2 slices on top of each english muffin half.

Poach 6 eggs by heating 2" of water in sauce pan until boiled. Reduce heat to simmer. Break one egg into a cup. Holding cup close to the water, slip eggs into water. Cook 3 to 5 minutes. Lift eggs from water with slotted spoons and place on top of Dried Beef slices. Spoon warm hollandaise sauce over eggs.

Eggs Cakes
PREPARATION TIME: 10 MINUTES
SERVES: 4

Chop 4 hard-boiled eggs, combine them with 1 package of KNAUSS Dried Beef, chopped, 1/2 cup bread crumbs, 1 egg, 1 teaspoon minced parsley and a little pepper. Form into flat cakes, dust lightly with flour and sauté in butter until brown on both sides. Try these for breakfast with a broiled peach.

Eggs á la Dried Beef
PREPARATION TIME: UNDER 10 MINUTES
SERVES: 4

Melt 1 tablespoon butter or shortening in a frying pan, add 1 package KNAUSS Dried Beef, chopped into small pieces, and 1 tablespoon grated cheese, toss lightly until frizzled. Add 1 cup diced tomatoes, season with salt and pepper, then add 4 beaten eggs. Stir and cook until creamy.

Eggs Celestine
PREPARATION TIME: 10 MINUTES
SERVES: 1

Broil KNAUSS Dried Beef on a toasted English muffin, with a poached egg on top. Cover with a cheese sauce and brown under the broiler.

Hot Dried Beef & Cheese Pockets
PREPARATION TIME: 5-8 MINUTES TO PREPARE / 10-12 MINUTES TO COOK
SERVES: 4

Heat oven to 375°F. Separate one 8 oz. can Pillsbury Refrigerated Crescent Dinner Rolls™ into 4 rectangles. On ungreased cookie sheet, press or roll each to form 7x5-inch rectangles. Place one slice of KNAUSS Dried Beef and one slice of cheese on each rectangle. Fold dough in half over filling; press edges to seal. Bake for 10 to 12 minutes.

Scrambled Eggs & Mushrooms
PREPARATION TIME: 15 MINUTES
SERVES: 4 to 6 (1 egg per person)

STEP 1: In a sauce pan, sauté 1 package KNAUSS Dried Beef, chopped, and 1 cup sliced mushrooms in 2-3 tablespoons butter for 8-10 minutes. Remove Dried Beef mixture from sauce pan. STEP 2: Put 1 tablespoon of butter in pan. Add 4-6 eggs, depending on serving size desired, in the pan and scramble. Cook over heat until eggs are fully cooked. Serve on plate and top with Dried Beef mixture from step 1.

Summertime Melon Delight
PREPARATION TIME: 5 MINUTES
SERVES: VARIES

The perfect brunch for the perfect summer day. Thin sliced naturally cured KNAUSS Dried Beef wrapped around a juicy melon or cantaloupe slice. Serve with a block of Cheddar or Provolone cheese and you have a meal fit for royalty. Bon appetite.
