Recipe: ORECCHIETTE WITH BROCCOLI RABE AND SAUSAGE

Ingredient
1/4 Cup Olive Oil
4 Garlic Cloves, Peeled And Chopped
1 LB. Italian Sausage (Hot or Sweet)
To Taste Salt And Pepper
1 LB Broccoli Rabe
1 Cup Broccoli Rabe Water
1 LB Orecchiette
For Topping Freshly Grated Pecorino or Romano Cheese


Cooking instructions:

Heat oil to medium-add garlic and cook for 3-4 minutes-add sausage (cut into bite-sized pieces) and cook 5-10 minutes or until done. Add cooked broccoli rabe to sausage-Add rabe water, salt and pepper. Raise heat and cook sauce. (3-5 minutes) Cook orecchiette "al dente" drain and return to pot on medium hight. Add sausage & rabe sauce to pasta-stir together and remove from heat. Add fresh romano cheese. Makes 4-6 servings.
