Recipe: WAHOO WITH PESTO

Ingredient
2-1" Thick Wahoo Filets
1 TSP. Bacon (Crumbled)
2 TSP. Pine Nuts
1/2 Cup Roasted Red Peppers, Finely Chopped
1 TSP. White Raisins
1/2 TSP. Onion Powder
1/2 TSP. Tarragon
1 TSP. Ghee Butter(Reduced Butter)


Cooking instructions:

Saute fish for about 2-3 mintues in hot pan, turning once to sear the outside. Add the other ingredients and saute until peppers are softened. Add butter at last minute.

Serve with pieces of bread. (Of your choice) Place fish on plate and add "pesto" topping.

Note: You can up the ingredients to fit the number of fish pieces you need for your guests.
