Welcome to Simply Recipes!
This blog arose out of a desire to learn how to cook the dishes I grew up with. I've been spending a lot of time with my parents lately, getting them to show me step by step how they prepare the meals we love. Both of my parents are excellent home cooks, which they needed to be to raise six kids. Most of these recipes use only whole food ingredients and only occassionally a few things from cans or prepared foods. We believe in a varied, healthy diet, using real butter, real cream, eggs, and protein from meat and fish. Many of the recipes are low carb (though not necessarily low cal). Enjoy!Chocolate Zucchini Cake
When I first encountered Clotilde Dusoulier's fabulous Chocolate and Zucchini website, I thought to myself, "How wonderful, the ingredients of my favorite cake!" My grandmother taught me how to bake when I was very young, and later when I was in high school she sent us a recipe pulled from Sunset Magazine for Chocolate and Zucchini Cake. Being adventurous, and knowing how good zucchini bread tastes, I tried it and it quickly became my favorite - the standard against which all future chocolate cakes were measured. The main distinction of this particular cake is its moistness. The zucchini absorbes the cocoa delivering the full flavor of chocoate, but without the heaviness of some other chocolate cakes. Today mom pulled the recipe out of some forgotten folder, still intact from the September 1974 issue of Sunset. I haven't made the cake in over twenty years, but it is still as delicious as I remember it. Here's to you Clotilde! Happy belated Birthday and thank you for the inspiration of Chocolate and Zucchini.

Huevos Rancheros
Some dishes are unique to families. Although I suspect that huevos rancheros (Spanish for "ranch eggs") are part of many families' traditions, ours was the only family I knew growing up that had eggs prepared this way on a regular basis. In our family lexicon, "huevos" (pronounced wevose, with the beginning like "when" without the n) only means one style of eggs - scrambled eggs that have been cooked in salsa. Huevos rancheros on Mexican restaurant menus are often a slightly different variation - whole eggs, not scrambled, cooked on salsa and served with tortillas. My mother has her particular style of cooking these eggs that she learned from her mother and that I now pass on to you.

Blueberry Pie
When blueberries are in season, what better to do with them (other than eating them straight from the basket) than make blueberry pie? Blueberries have been found to be a "superfood", so good for you that you should go out of your way to eat them. They neutralize free radicals, protect your heart, improve your vision, and protect against degenerative brain diseases. (See the whole story at The World's Healthiest Foods website.) Yet another good reason to make and eat blueberry pie.
