• 1 sirloin steak (10 oz.) • 2 oz. Portobello mushroom, sliced into chunks • Chopped scallions • Chopped garlic • Clarified butter • 2 oz. red wine • 2 oz. demi glace • Salt and pepper to taste • Pinch of heavy cream • Dale's Seasoning
Season meat with Dale's Seasoning, salt and pepper. Allow time to rest, then grill to desired doneness. In a small skillet, saute scallions, garlic, and mushroom in small amount of clarified butter. Add red wine and demi glace. Finish with cream. Season well. Slice steak on bias, arrange on serving plate. Pour sauce over meat and garnish with mashed potatoes and asparagus spears, if desired. |
