• 1 veal cutlet (6 oz.) • Italian bread crumbs • Salt and cracked black pepper to taste • Clarified butter • 1 oz. Vodka • 2 oz. demi glace • 1/2 tsp. chopped garlic • 1/2 tsp. chopped green onion • 1/2 oz. heavy cream • Seasoned flour as needed • Egg wash
Dust veal with seasoned flour, then eggwash, then bread crumbs. Add clarified butter to a hot skillet and saute veal until done. Remove veal and add cracked pepper. Deglaze with Vodka. Add demi glace, garlic, green onion, and season with salt and pepper. Finish with heavy cream. Pour sauce over veal and serve. Serves 1 |
