BLACKBERRY DUCK

• 1 duck breast (10 oz.)
• Salt and pepper to taste
• 2 oz. demi glace
• 1 oz. port wine
• 1 oz. blackberries
• Pinch of black pepper
• Clarified butter
• Scallions

Season duck breast with salt and pepper. Grill to desired doneness. In a small skillet, saute scallions in clarified butter. Add blackberries and mash gently. Deglaze with port wine. Finish with demi glace. Cook until thickened. Season with salt and pepper. Slice duck on arrange on serving plate. Pour sauce over duck and garnish with parsley. Serves 1
