• 1 salmon filet (7 oz.) • 1/2 cup teriyaki marinade • 4 canned mandarin oranges (reserve juice) • Cornstarch slurry (1 Tbsp. cornstarch with water) • Chopped parsley • Chopped garlic • Fresh spinach
Add reserved mandarin orange juice to teriyaki marinade to make according to taste. Marinate salmon for 4-6 hours. Place on hot grill and cook to desired doneness. Place marinade in a small skillet. Add parsley and garlic and heat to boiling. Add cornstarch slurry to thicken. In separate pan, saute spinach and arrange on serving plate. Place cooked salmon on plate and pour sauce over fish. Garnish with rice pilaf, if desired. Serves 1 |
