PHANOUROPITA

THIS CAKE HONORS THE MEMORY OF SAINT PHANOURIOS THE GREAT MARTYR WHO APPEARS TO HAVE LIVED DURING THE SECOND OR THIRD CENTURY - THE PEAK OF CHRISTIAN PERSECUTIONS. BELIEVERS PRAY TO SAINT PHANOURIOS PARTICULARLY FOR HELP IN FINDING LOST ITEMS AND FOR GUIDANCE IN A GIVEN SITUATION. THIS CAKE IS VERY IMPORTANT TO OUR PARISH. WHEN OUR MEMBERS WERE SEARCHING FOR A LOT TO BUILD A CHURCH, THEY KNEW THEY NEEDED HELP. THEY PRAYED TO SAINT PHANOURIOS TO ASSIST THEM. WITH HIS HELP, THEIR PRAYERS WERE ANSWERED. THEY FOUND THE LOT ON HIS NAME DAY. IN HIS HONOR, THEY HAVE BEEN BAKING PHANOUROPITA EVER SINCE AND WILL CONTINUE TO DO SO.

PHANOUROPITA:

Ingredients:

1-CUP OLIVE OIL

1 CUPS SUGAR

CUP CRUSHED WALNUTS

4 CUPS FLOUR

CUP GOLDEN RAISINS

CUP DARK RAISINS

2 CUPS WATER

CUP COGNAC

1 TEASPOON CINNAMON

1 TEASPOON CLOVES

1 TABLESPOON GRATED LEMON PEEL

4 TEASPOONS BAKING POWDER

1 TEASPOON BAKING SODA

Directions:

MIX TOGETHER THE FLOUR AND BAKING POWDER. MIX THE OIL AND THE FLOUR MIXTURE UNTIL CRUMBLY. BLEND THE COGNAC WITH THE BAKING SODA AND SET ASIDE.

BEAT TOGETHER VERY WELL THE REMAINING INGREDIENTS (SUGAR, WALNUTS, RAISINS, WATER, CINNAMON, CLOVES AND LEMON PEEL) INCORPORATING THE COGNAC.

COMBINE THIS INTO THE FLOUR MIXTURE AND BLEND WELL. POUR INTO AN OILED AND FLOURED PAN. BAKE IN A PREHEATED 350 DEGREE OVEN FOR 45 MINUTES (OVEN TEMPERATURES MAY VARY).
