Quail Stuffing

mushrooms, chopped |

Shallots,

Ham,
julienned |
| 1/4
lb. |
Cheese |
| 2
oz. |
Fresh
sage |
| 1
oz. |
Sherry |
| To
taste |
Salt
& pepper |
Cooking instructions:
-
Saute
mushrooms in olive oil over high heat in small batches
to ensure caramelization.
-
Add
ham and shallots toward the end of the mushrooms'
cooking.
-
Add
cheese, sage, seasonings and sherry to deglaze pan.
-
Cool
before use.
