Recipe: Quail Stuffing

 

Amount
Ingredient
1 qt Wild mushrooms, chopped
2 Shallots, minced
6 slices Ham, julienned
1/4 lb. Cheese
2 oz. Fresh sage
1 oz. Sherry
To taste Salt & pepper


Cooking instructions:

  • Saute mushrooms in olive oil over high heat in small batches to ensure caramelization.
  • Add ham and shallots toward the end of the mushrooms' cooking.
  • Add cheese, sage, seasonings and sherry to deglaze pan.
  • Cool before use.
