Recipe:
Roasted Yam Chutney in Sage-Brown Butter

orange - juiced |

pumpkin seeds |

wine |
| 1/4

Apple,
cranberry or orange juice |
| Dashes |
Cinnamon,
nutmeg, allspice, cumin |

Cooking instructions:
Preheat
oven at 375 degrees
Heat
skillet to medium and add butter.
When butter begins to melt, add sage and stir.
At this point, the butter will begin to "brown"
(smell nutty) and the sage will start to "fry."
Add yams, dates, pumpkin seeds, and spices of your
choice.
Add wine and juice (apple, cranberry or orange) and
stir until all yams are coated.
Add orange juice (juiced from large orange) and toss
in juiced orange (whole).
Place skillet in oven and bake for 30 minutes - stirring
only once.
After 30 minutes, yams should be soft and browned.
Remove from oven.
