Recipe: Hot Buttered Rum

Amount
Ingredient
3/4 cup brown sugar
1/2 cup pure unsalted butter
1 tsp grated orange peel
1/4 tsp cinnamon, nutmeg, and allspice
1/4 cup toasted pecan pieces
1/4 tsp clove (you may grind your own)

Cooking instructions:

In a small bowl combine sugar, room temperature butter, orange peel, and spices. Next, gently toast pecans on medium heat--just until you begin to smell the oils. Cool pecans slightly and add to butter mixture. Gently mix (or fold) compound butter until combined. You may use wax paper to freeze butter in a cylinder shape, or you may keep it ready to use in the refrigerator.

For serving: Place one rounded tablespoon of butter mixture in a mug. Add 3 tbs of rum and 1/2 of boiling water. Stir well.

You may substitute hot apple juice, cider or coffee for the rum and water. Enjoy!
