Curry Dungeness Crab Salad

Serves four people

1 c. of Dungeness crab meat
1 peeled and medium diced Granny Smith apple
2 tbsp. of diced shallots
1 tsp. chopped cilantro
1 tsp. chopped chive
½ c. mayonnaise infused with 1 tsp. of curry powder
¼ c. gold raisins
1 tsp. olive oil
1 tsp. lemon juice
Salt and pepper to taste
½ tsp. of olive oil infused with curry
½ tsp. Tobiko caviar

Procedure:

Mix Dungeness crab, Granny Smith apple, raisins, herbs, shallots, mayonnaise, lemon juice, and olive oil. Add salt and pepper to taste. Place mixture in ring mold in the center of the plate. Top with micro green salad tossed in vinaigrette. Garnish the plate with curry olive oil and Tobiko caviar.
