S & J'S CRAWFISH PIE

S & J Oyster Bar
Pie Shell: You may use a commercially prepared product or your own recipe
(for one 9" pie or 4 individual pies)
Crawfish Mixture:
1 lb. crawfish (chopped)
1/2 cup white onions (chopped
1/2 cup green onions with tops (chopped
1/4 cup bell peppers (chopped)
1/4 cup celery (chopped)
1/4 cup butter
Sauté the above ingredients then add the following spices and continue to simmer:
1/2 tsp. salt
1 Tbsp. chopped parsley
1/2 tsp. black pepper
1/2 tsp. white pepper
1 tsp. seasoned salt
1/4 tsp. cayenne
1 tsp. granulated garlic
1/2 tsp. Tabasco
1/2 tsp. Worcestershire sauce
Dissolve 1 1/4 tsp. cornstarch in 1/2 cup cold water. Add to mixture and bring to slow boil. When mixture is slightly thickened pour into pie shell. Bake at 400 degrees for 15 minutes.
