Queen's House Orange Scented
Cornish Hens
Marinade
1 orange, sliced thinly and in half
1/4 c. Grand Marnier
2 tbsp. lemon juice
Mix together all ingredients to make marinade.
Hen cooking preparation:
1) Rub a mixture of herb seasoning on bird including
the cavity.
2) Place orange slices under skin at breast and
thigh.
3) Place on roasting rack in pan sprayed with
oil.
4) Pour in pan mixture of 2 parts chicken broth
to 1 part orange juice.
5) Pour in marinade from orange slices.
6) Place in 475 degree oven for 15 minutes to
sear in juices. Turn oven to 375 for 30 minutes, basting often with juice
in pan.
7) Place bird on bed of wild rice and serve with
favorite vegetable.
