Curry Miso Gravy

A Tasty Sauce For Your Favourite Dish

Serves 2-3

For variation, use 1 Tbs. fresh ginger juice instead of the curry powder.

1 Tbs. unrefined sesame or sunflower oil
1 onion, cut very finely
1 cup fresh mushrooms, sliced finely & sprinkled with a few drops of lemon juice
Small pinch of sea salt
1/4 cup cooked sweet corn kernels
1 cup water
1/2 tsp. (or to taste) curry powder
1 Tbs. (or to taste) Clearspring 0rganic Mugi or Genmai Miso
1 Tbs. kuzu
Chopped fresh parsley to garnish

Cury Miso Gravy

Heat a frying pan, add the oil and cut onions and sauté for 2-3 minutes uncovered. Add the mushrooms and salt, cover and gently sauté for 10 minutes. Add the corn and water and bring to a boil.

Reduce the flame to minimum and add the curry and miso. Dilute the kuzu in a small amount of cold water, add to the cooking pot and stir for 2-3 minutes until thick and clear.

Serve hot on top of your dish and garnish with the chopped parsley.
