Seafood Boxty

Ingredients:

1 oz. mussels
1 oz. cod
1 oz. salmon
4 oz. yellow rice (precooked)
2 oz. red chili aioli
2 oz. black bean corn relish
1 tbsp. cilantro
2 oz. chicken stock
2 oz. salsa
2 tsp. cajun spice

Method:
In a large pan saute the first three ingredients, next mix the cilantro, aioli, chicken stock and cajun spice together and simmer until done. Laddle onto a boxty and wrap. Top with the bean/corn relish, enjoy.
