Burnt cheese

Tonight we had tuna melt open-faced sandwiches for dinner. Yum. Some of the cheese burned, and I cleaned up the broiling tray. Yum again. And while I was there eating that burnt cheese, I remembered some 25+ years ago when I worked briefly at a Pizza Inn and told my father about the oil we sprayed on the cheese to keep it from burning. The next time he came in he made sure to tell the waitress to tell the cook to leave the oil off my cheese -- let it burn. Good stuff, burnt cheese.

Dad was a regular smoker from the age of 12 or so and died of a heart attack in 1992, at the ripe old age of 57. Man did he ever love cheese.

Eggs and Sausage, and A Side of Toast

Ralph Bennett likes all-night diners. I agree with him that it's a shame that most of the all-night eateries are now strewn along the interstate, but that's just the way it is. Here in Blacksburg, we have a place called Joe's, but I'm never out and about late enough to find out what it's like at 2 AM.

Cheese

John of TexasBestGrok links to cheese.com. As I noted in the comments at his blog, my favorite is Wensleydale, though Y-Fenni is an excellent choice as well. To paraphrase Benjamin Franklin, "Cheese is living proof that God loves us and wants us to be happy."
