This cake, which is served at the Lotus Restaurant at Parrot Cay Resort in the Turks & Caicos, is absolutely delicious. It's pretty simple and straightforward, but the flavours are great. I don't claim to be all that sophisticated when it comes to fine food, but I do know what I love when it goes into my mouth ... and this cake, which is light and fluffy and full of ground hazelnuts, is really amazing. I go to the Caribbean whenever I get the chance; it's as close to heaven as you'll ever find.
