I haven't watched him in a long time, so it may be true he is getting preachy and arrogant.

But when his show started he was down to earth, a little kitschy, and one of the few people bringing science and rigorous methodology to bear on cooking, like the more boring but equally satisfying "America's Test Kitchen" on PBS.

So many chefs who have shows spout off inaccurate old wives tales about the reasons and scientific justifications for their cooking methods. It's ok if your knowledge is gained from experience and not physics and chemistry, but don't make it sound like it is solid science.
