Appetizer For a No-Meat Friday

Hummus is the Yummus

I just couldn’t resist. I simply can’t spend the week with you here at Faith & Family Live and not share a recipe. So here it is! Hummus!

Since Friday is traditionally a meatless day for Catholics around the world, this might be the perfect thing to prepare as an appetizer for dinner tonight.

I have to confess, though. This is not my recipe. This comes from my stunningly beautiful wife, Char. Her... READ MORE

The Best Kept Secret of the Kitchen

Cooking as a Charism

If you’re like me, family life in your home is usually hectic, especially at meal time. Or when preparing for meal time.

Goodness! There are days when we wonder how we are going to eat. There’s no one home to cook. And there’s no way we’re stopping for fast food (that’s anathema at our house). Those times make for late nights and rushed eating, sometimes even forgetting to bless our food before we... READ MORE

Using the Peas

A fast, easy noodle recipe

We had a snow pea plant in our garden, and it was producing enthusiastically. I needed a way to use all those sweet crunchy little pods.

Enter a recipe that my sister originally found on the Kraft website. She adapted the dish to her family’s tastes and I further adapted it to my family’s, and all the people involved (even the children) think it’s pretty tasty.

And I love it because we’re eating those... READ MORE

Bake Those Vegetables!

A great summer side dish

Summer vegetable season. Yum.

The newest issue of Food & Wine arrived here yesterday. One of the recipes caught my sister’s eye, so for dinner today we tried it.

It’s a keeper. Simple but delicious, and uses vegetables (okay, technically squash and fruit) that are abundant and cheap during the summer months. We tweaked the recipe a little and enjoyed it greatly.

Here it is:

Summer Vegetable Casserole... READ MORE

A Friend to Salad

Homemade croutons - simple and delicious

In summer, we love dinner salads.

We start with lettuce, and add a protein. Chicken or crumbled bacon with chopped boiled eggs are our favorites. Then we toss in whatever vegetables, fruits, or nuts we’re in the mood for, and voila! A cool dinner that’s perfect for hot weather.

I know there are many men who would not consider a salad to be sufficient for dinner. I’m lucky to have a husband who will... READ MORE

Summer Living

Hot enough for ya?

My goodness it’s hot here. When the temps rise, the last thing I want to do is add another 350 degress to the mix. These days, the oven stays off!

Tonight we are grilling hot dogs for dinner and in an effort to not grill hot dogs every night for the next three months, I thought I’d ask: what are your favorite summer dinners?

Hot Dogs for Dinner

Making peace with imperfection

Our little guy is sick. We’re currently on day six of a respiratory illness that I’m suspicious is RSV. While I’m glad not to be in the hospital this time, we still ended up in urgent care this past weekend, where Blaise was diagnosed with croup and an ear infection.

He’s running an on-and-off fever and is not his usual energetic self, which means we’re having some slow days around here. Today Blaise... READ MORE

Another Easy Pasta Dish

For warmer weather

About a year and a half ago I shared one of my favorite pasta recipes: carbonara. I love that recipe because it’s easy and I nearly always have the ingredients on hand, but it’s a little too heavy for warm weather, in my opinion.

I crave the combination of bacon and pasta, though, so I was thrilled when I came across this recipe a few years ago. I believe it is very loosely based on an Italian dish,... READ MORE

Perfect Pizza ... on the Grill

Hits and Misses in Creative Cooking

Once, when I posted about making homemade pizza here at Faith & Family, someone in the comments recommended trying it on the grill. At the time, I remember thinking that the idea of grilled pizza was a little too “out there” for this cautious cook.

But I recalled the recommendation when I came across a grilled pizza recipe in a favorite cookbook of mine recently. This recipe called for thawed frozen... READ MORE

Pancake Day

it's Breakfast for Dinner night

While Danielle’s crew enjoyed a fancy feast for breakfast, we’re doing breakfast for dinner. For as long as I can remember, I’ve served up heaping towers of pancakes for dinner on Fat Tuesday—a feast before the fast. We haul out the syrup and the butter and I also add whatever extra ingredients people desire (namely: chocolate chips) to their flapjacks.

Historically, the idea of having pancakes the... READ MORE
