Red Salt's ahi poke takes a unique approach to the classic island dish.
After making a name for himself on the Big Island and later Maui, Hawai'i Regional Cuisine co-founder Peter Merriman has finally expanded to Kaua'i.
The new Josselin's Tapas Bar and Grill on Kaua'i, open for dinner nightly, specializes in country French, seasonal Provencal and Asian dishes, with fresh local fish and other island ingredients.
Jean-Georges Vongerichten's new dinner-only Kaua'i Grill in the St. Regis Princeville showcases the local scenery as well as local seafood.
Pan-seared ahi over Okinawan potato puree is served with an oxtail demi glace and bok choi is one of the changing fresh seafood specials at Oasis on the Beach on Kaua'i.
Merriman's new Kaua'i location has an ocean view of the Po'ipu coastline from its lanai.
The 90-acre Kilohana Plantation -- 70 acres of which are in agricultural production -- is home to the new 22 North restaurant, which features locally grown items on the menu.
Locally made goat cheese and vegetables from Kaua'i and other Hawaiian islands create a salad at the new Oasis on the Beach on Kaua'i.
