Sub restaurant redesign focuses on UWSP affiliation

A good chunk of the business at Cousins Subs, 641 Division St., comes from the University of Wisconsin-Stevens Point. The owners want the store to reflect that.
Team Schierl Companies is turning the sub shop into a UWSP-themed dining experience. There will be UWSP wallpaper, tables and chairs. Memorabilia from the athletic department and departments of Theater and Dance as well as Art and Design will adorn the walls.
When you eat at this Cousins, you'll know you are in Stevens Point.
"Much of our business does come from the university and the activities it puts on throughout the year," said Bill Schierl, one of the co-CEOs. "We thought it would create an environment that supports that patronage.
"You'll see a lot of purple and gold."
Team Schierl is hoping, Schierl said, to create a place that students and staff members will feel comfortable in, and also serves a practical purpose.
Space will be available to advertise upcoming shows, exhibits, sporting events and other campus activities.
"Hopefully people find it an interesting and fun environment," Schierl said.
The company contracted students from UWSP to do much of the design work. Interior Architecture students designed the new layout. The Design Center at the university, staffed by students, is creating the wallpaper using images from the archives.
The idea is to continue the work each year. The redesign is not a one-time change; each new batch of students will have a chance to put their own fingerprints on the restaurant.
"It's representative of what students are doing now, so it stays current," Schierl said.
Schierl said they are aiming for a homecoming re-opening in October with all the changes in place.
