The weekend is here. I have no idea why, but this week has felt like it has gone on forever. This morning I get to go to a Roman Festival for my son’s 3rd grade class. I have no idea what it will entail, I just know I had to send in 3 cans of black olives for the event. My son loves Greek and Roman mythology, so I am sure he will have a great time. In 2nd grade they had the Greek mythology unit, and he was in heaven. Before I forget. Head over to my Facebook page for a giveaway going on. It ends tonight at 6pm EST.
Thursday Things
I talked about this yesterday, but I am seriously so ready for winter to be over. I was out running errands yesterday, and it was a whopping 7 degrees. Shoveling snow yesterday morning it was -12. As I am typing this, there is a news report about how shivering burns calories. So maybe I should rethink wanting spring to arrive early thing. No, nevermind; I think I would rather workout than be cold.
Grilled Artichoke, Chicken & Bacon Pizza
I have about had it with winter. I realize it is only the beginning of February, but I am over the snow and cold. Part of the reason we moved to Colorado was for the mild winters. Well the last two weeks have been anything but, and I am over it. I have shoveled enough, my back is sore, and I am tired of my toes always being cold. We joked recently about moving to Australia. Crescent Rolls
So who watched the big game last night? More importantly, who had some great food they want to share? I made a new version of Nutella Brownies that I will be sharing with you sometime soon. They were so fudgy, it was hard to actually bring the pan to the party, and not just keep them for myself. I also made an Artichoke Jalapeno dip that my husband loves. It was a great time with friends, good food and good drinks. I think we only half paid attention to the game.

I can’t believe how crazy the weather is this everywhere. Every time you turn on the TV or get on the computer you see updates about freezing cold temperatures, schools being cancelled, and crazy ice storms. I am feeling very fortunate for our Colorado winter. We have had pretty mild temperatures, with a few days of snow here in there. Sunday was 60 and sunny. Monday we got 6 inches of snow. Wednesday was back into the 50′s. Hard to really complain too much.

We are all busy, right? Weeknights can be crazy with work, school, sports, practice, and everything else that is going on. Sometimes we need dinner to come together in 15 minutes, and just don’t really want to think about it. That is where a few go to ideas come into play. Having a few things in your pantry, and you are set for a busy week.
Roasted Shallot & Garlic Dip
We are only a week away from the Super Bowl. I know there are lots of people who don’t really care about the game itself. But having good and yummy snacks while watching the commercials are necessary. Even when it is just our family watching the game, we like to have a few fun snacks around. If at anytime the rest of the year we decide to just do snacks for dinner, my 8 year old always calls it a “Super Bowl dinner”. So at the very least we are making memories! This year I think we are going to a friends house for the game, but my husband promised I would bring a few snacks. We will have to see what I can come up with!
