If you thought the lines to purchase your lunch were long, wait until 10 billion people are standing between you and your next meal. Everyone wants food that’s varied, tasty, healthy, safe, and affordable. This session takes a serious look at how mini food factories in our kitchens will create healthier and safer meals; why eating insects may help the environment; why in vitro meat is a sustainable option for the future; and how all of these things result in affordable food options for underdeveloped nations. You'll leave with a better understanding of how food science can help resolve world hunger problems, and how you may be eating in the very near future.
