QUARK-ING IDEAS: What to make with the low fat alternative to cream cheese

Ingredients:
3 eggs separated
75g sugar
2tbs plain flour
100g caster sugar
50g butter
50g unsalted pistachios
Zest and juice of one orange
250g The Lake District Dairy Co. Quark
Zest and juice of 2 lemons
Method:
1. Beat the egg yolks and sugar to a pale cream. Add the flour, Quark, orange zest /juice and combine
2. Whisk the egg whites until stiff and fold into the quark mixture
3. Grease a 20cm loose bottomed deep tin
4. Bake in the oven at 180C/Gas Mark 4 for 50 mins until golden brown
5. To make the pistachio caramel topping gently melt the sugar and butter in a heavy bottomed small saucepan along with the pistachios and the juice from the orange. Once it starts to bubble, take off the heat, allow to cool for 10 minutes. Then gently pour over the cake and serve
6. For a lighter topping cover the top with fresh berries (raspberries or blackberries work well)

300g shortcrust pastry
200g pack lardons, smoked or un-smoked
50g strong cheddar, grated
500g The Lake District Dairy Co. Quark
4 large eggs, beaten
1. Roll the pastry out and use to line a 23 x 2.5cm flan tin. Press the pastry into the sides and lightly prick with a fork. Chill for 10 mins. Put a baking sheet in the middle shelf of the oven and heat oven to 180°C fan/200°C/ gas mark 6
2. Line pastry case with foil, shiny side down, fill with baking beans and bake on the hot sheet for 15 mins. Remove foil and beans and bake for 4-5 mins more
3. Fry the lardons. Scatter 2/3 of the cheese and lardons evenly over the bottom of pastry case.
5. Whisk Quark and eggs. Season. Pour three-quarters of the filling into the pastry case
6. Put flan tin back on the baking sheet and pour the rest of the filling. Scatter remaining cheese on top. Lower the oven to 170°C fan/190°C/gas mark 5. Bake for about 25 mins. Serve hot or cold

125g digestive biscuits, broken
70g caster sugar
50g unsalted butter, melted
1000g The Lake District Dairy Co. Quark
85g unsalted butter, softened
225g caster sugar
3 large eggs, plus 2 yolks
Finely grated zest of 1 lemon
2 tsps (10ml) vanilla extract
1. Preheat oven to 170°C fan/190°C/gas mark 5. Butter and line a 23cm spring form tin.
2. Pulse the digestive biscuits and sugar then add butter. Press this on bottom of prepared tin and bake for 15 minutes. Transfer to wire rack to cool
3. Using an electric food mixer, beat Quark, butter and sugar until smooth. Beat in the eggs and yolks then lemon zest and vanilla extract
4. Take a piece of kitchen foil and wrap foil tightly around bottom and sides of pan. Set in a roasting pan, pour the cheesecake filling into the tin
5. Pour boiling water half way into roasting pan, transfer to oven. Bake for 1 hour, cool completely, then chill. Serve with seasonal berries

QUARK ON TOAST
INGREDIENTS Serves: 1 - 2
2 slices of good country white bread
2 large flat cap mushrooms or 200g wild mushrooms
20g butter
2tbsp olive oil
100g The Lake District Dairy Co. Quark
100g rocket
2 cloves of garlic, sliced
Pinch of thyme
Big pinch of chopped parsley
Beef steak (optional)
Method:
1. Toast the bread
2. Heat a frying pan and add the butter and oil, when frothing add the sliced mushrooms
3. Cook for 3 mins until brown. Now add the garlic, thyme and season
4. When it is all cooking nicely add the rocket, The Lake District Dairy Co. Quark and parsley. Toss together and spoon onto the toast
5. These mushrooms would be lovely with a nice juicy steak!

BASIL & TOMATO STUFFED CHICKEN
Serves: 4
Ingredients:
4 skinless boneless chicken breasts (600g)
100g The Lake District Dairy Co. Quark
2 tbsps (30ml) chopped fresh basil
2 tbsps (30ml) sun-blush tomatoes, chopped
1 tbsp (15ml) dried breadcrumbs
12 pancetta slices (or thin-cut smoked streaky bacon)
Method:
1. Preheat the oven to 180°C fan/200°C/gas mark 6. Mix together The Lake District Dairy Co. Quark, basil, tomatoes and breadcrumbs
2. Place the chicken on a chopping board breast side down. Open out the fillet and spread a quarter of The Lake District Dairy Co. Quark mix over each chicken breast. Fold the fillet back over and wrap each with three pancetta slices
3. Pop into a non-stick baking dish and roast in the oven for about 25 mins or until the pancetta is golden and the chicken cooked through
4. Serve simply with fresh seasonal vegetables

4 lamb leg steaks (200g)
1tbsp coriander seeds crushed
Olive oil
Small bunch of mint
1 lemon
250g The Lake District Dairy Co. Quark
200g strong white flour
Small bag of salad leaves
1 jar sweet red peppers
1 peeled large carrot
100g The Lake District Dairy Co. Quark
1 clove of garlic
Small bunch of mint
1. Mix the coriander seeds, salt and pepper. Rub all over the lamb with a little olive oil. Leave to marinade for 30 mins in the fridge
2. Make the pitas by mixing the flour and quark together. Knead until nice and stretchy. Divide into golf size balls and roll round
3. Heat oven to 250°c/gas mark 9/10 with an oven tray or baking stone. Roll the balls out flat around 3mm thick. Place directly onto the tray or stone. They should take around 3 mins to rise. Remove and carefully cut open to eat
