Liverpool bar Yardbird takes inspiration from deep South while reclaiming fried chicken from take-aways

Creator of Korova and Alma de Cuba launches new city centre hangout

Yardbird, the latest new Liverpool bar from the creator of Korova and Alma de Cuba, opened yesterday.

Based on the corner of Berry Street and Duke Street, Yardbird specialises in fried chicken, doughnuts and cocktails.

Located on the site formerly home to the derelict Whitehouse pub - famous for adorning Banksy's rat mural - Yardbird's food menu takes its cue from traditional US Southern cuisine.           

 

Owner Rob Gutmann, the man behind Liverpool bars Korova and most recently, Motel, said the inspiration behind Yardbird is to 'reclaim fried chicken from the take-aways and bring it to a quality restaurant environment.'

Gutmann said: "As Malcom X says in his autobiography 'Everybody loves Chicken'. Yardbird wants to give the people the best fried chicken in the best setting."

He added: "We've seen a swathe of great new burger operations opening across the country, and I felt that fried chicken equally deserved to be 're-invented'."

Yardbird also makes its own doughnuts and is showcasing a cocktail menu that will feature house ‘hard shakes’ – blends of specialist liquors and traditional milk shake ingredients.

The food menu features classic combinations such fried chicken with biscuits and gravy and chicken with doughnuts and hot pepper sauce.

Similarly to Motel, Yardbird's artwork is the creation of graphic illustrator Dave Baddeley who draws on US comicbooks plus rock and roll counter culture.

And while its sister bar, Motel has adopted music from the US underground, Yardbird will feature a very British and European 'soundtrack' including punk, new wave, northern soul, and reggae.

"The building had become an iconic one in Liverpool," said Gutmann, "But has needed to actually function as something having remained derelict for so long. We feel that our 'Yarbird' does the building justice."

Yardbird opened last night and will be open everyday from 10am until late each night.
