Sauce Recipe

Meatballs are my grandpa's recipe - they're simple and amazing: Ground meat, eggs, plain breadcrumb, salt, pepper, garlic powder, whole onion (softened before adding), parmasean cheese

I heat the stone on the grill to around 650 degrees and put down some kosher salt. grill for 6-10 minutes. I love a little color to my cheese.

fresh dough, comes in a bag, my wife streched it out to the perfect size (I honestly don't understand how she's so good at it) It's not the partially baked stuff. I think my favorite part is letting the dough char a little on the bottom with the salt. It cooks into the dough and give you an awesome texture/flavor to the pizza!

I've always only used cornmeal between the stone and the crust when making pizza... I've never tried using salt.

Make sure its kosher salt! I don't love the cornmeal, but that's preference. My favorite pizza place in New York does Kosher Salt on the bottom, I believe it's the tits.

I love the way he develops the 7 hour sauce and the ingredients he adds BUT I take issue with his assessment that canned tomatoes are the best source of tomato (they are however easier and turn out great).

Every kroger I ever been in has Roma tomatoes at 99 cents per pound and they turn out great. To use you want to blanch and peel:

Bring a large pot of water to a boil. Add tomatoes until surface is full. Boil for approximately 1 (maybe 2) minutes until a couple tomatoes skin "rips". Remove tomatoes with slotted spoon, place in colander and Breifly run under cool water. Continue in batches until all tomatoes are done.

To peel, start at a rip in the skin and simply pull away from there. If there is no rip a pairing knife can easily make one.

From here you can continue as normal. I typically use a potato masher instead of hands but it's the same idea.

Notes on predicted cooking differences:

1) Don't be scared to add a little water at the beginning. Most cans of tomato have extra liquid that you add to the pot (and that liquid has a bad taste to me) to Make sure you can simmer for 7 hours you will likely need to add about that much water.

2.) To get fresh and chunky at the end you may wish to add fresh tomatoes 20-30 minutes earlier than the recipe adds canned tomatoes. They just take longer to soften to the right consistency.

Pizza stone > grill > to temp > add uncooked pizza > remove cooked pizza > eat a pizza.

That's not a recipe obviously but cooking pizza with a stone on a grill is actually crazy easy.

Preheat the grill with a pizza stone or metal pizza pan. I used a metal pizza pan last night for a stuffed pizza, turned out great! Then once preheated, cook for about 20-25 minutes and make sure you turn the pizza once every 5 minutes. That's it!! As for temp, I usually do around 400 with the metal pizza pan.

Haha - No, the 7 hour sauce is in reference to an earlier post of mine. The grilling of the pizza was roughly 7-8 minutes. All of the flavors mixed really well!

I've loved to cook and grill basically since I was a child. When I bought my house, my wife got me the Kamado Kooker - it's the IDEAL grill for high or low heat (at a reasonable price)... I used it as a great way to try smoking and pizza. /r/bbq, /r/smoking, and /r/pizza are great placed to look. Basically, I keep trying to push myself and try new things! The outcome is always good tasting food, who could complain?
