The two main problems with agreeing to Greece's demands/requests:

a) Other Euro countries would expect to get debt forgiveness too, which would in no way incentivize them to spend wisely.

b) No guarantee that Greece would not end up in the same situation a couple of years down the road, as corruption and lack of tax payments are still pervasive in the country and a new left wing government is hell bent on increasing public expenses.
