  • Tofu smoothie

Use a food processor to blend 50g (2oz) of soft tofu, one chopped apple and a tablespoon of either sunflower, pumpkin or sesame seeds with your preferred choice of full-fat milk - cows', goats' sheep's, rice or soya milk.

Add a couple of drops of vanilla essence or a teaspoon of unsweetened cocoa powder if you like the taste. Blend for a few seconds more and then drink the smoothie.

  • Hot apple oats

Oats are a good standby in your store cupboard, and they make a delicious, nutritional breakfast.

    Ingredients

    4 tablespoons porridge oats

    120ml (4½fl oz) water

    1 apple

    2 tablespoons live natural yoghurt

Place the oats in a small saucepan and pour the water on top. Leave the oats to soak while you grate the apple, reserving a few slices for a garnish at the end. Add the grated apple to the pan and cook the mixture over a low heat until simmering.

Let the oats cook for a couple of minutes more and then divide into two portions, then top with a tablespoon of yoghurt and a few slices of apple.
