I have shared you two soup recipes in my earlier post. I told you Tomato Carrot Soup and Sweet Corn Soup recipe. Today, I am presenting to you a special soup recipe. This is a mix vegetable soup. I used three vegetables to make this soup. Here are the three vegetables one, sweet corn; two, carrots and third, beans.

The three ingredients used in this mix vegetable soup recipe are very healthy. All three vegetables contain a good amount of dietary fiber. Corn is a rich source of vitamin A, B & E. Carrot and Beans are also a rich source of vitamin A. Good amounts of vitamin C & vitamin K also found in carrot. Beans contain the good amount of Vitamin B & Vitamin C. Carrot, Beans & Corn all three are a rich source of minerals too. Beans contain a rich amount of Iron, Calcium, Magnesium & Potassium, while carrot has a good amount of calcium. Overall, these three things are a perfect health pack. Carrots, corn and bean soup fulfill the deficiency of vitamin, minerals and dietary fiber. In this winter, try this healthy & tasty soup.
Ingredients for Mix Vegetable Soup
Sweet Corn – ½ cup
Carrot – 1
Beans – 100 grams
Corn flour – 1 Table Spoon
Salt – according to taste
Ginger – small piece
Water – 3 cups
Basic preparation for Mix Vegetable Soup
- Finely chop Carrot and Beans.
- Finely grate Ginger
- In a small bowl, add two table spoons of water in corn flour and mix well.
Method for Mix Vegetable Soup
Step 1: Heat water and when it starts boiling, add sweet corn. Boil it for approx 5 minutes.
Step 2: Now add rest of chopped vegetables and grated ginger. Cook it for approx 10 minutes on simmer gas flame; add salt according to your taste.
Step 3: Now add corn flour batter and stir well, let it cook for the next 5 minutes and then turn off the gas.
Serve Mix Vegetable Soup when it is hot.
Few useful tips for Mix Vegetable Soup
1) You can use other vegetables also for making this mix vegetable soup.
2) I generally add freshly crushed black pepper in this soup recipe. It gives a spiced touch to the soup recipe.
3) You can even add a ½ table spoon of soya sauce to give it a different and yummy taste.
