He said: 'If you talk to them like a real person, just see what they’re about, make them feel normal and make them laugh.
'You can catch something of the person behind the name.'
Commenting on his 1998 shot of Angelina Jolie, he described the actress as a 'ball of fire'.
'I wanted to capture that in my photographs,' the 58-year-old told The Telegraph.
The 58-year-old described Cameron Diaz at this shoot as 'really smart' and 'very witty', adding 'she had me cracking up the whole way through'

Graham was another actress that mystified him. 'She was kind of awkward in the way she moved and posed, but that was actually really intriguing,' he said.
The unique portraits, some of which were taken at Holz’s weekend retreat in the Catskill Mountains, will now form part of a new book, which has taken five years to put together.
Holz, who was first bought a camera aged 15, explained he had to go through 15 cabinets of prints to decide on the final cuts.
Many of the photos have not been seen before and are original shots instead of what was published, he added.
