Delicate balance
Traditional culinary rosewaters found in Middle Eastern delis are lightly floral and can be used with some abandon in cooking. Modern rosewaters sold for baking tend to be stronger (similar to vanilla or almond extracts) and should be added gently by the teaspoon or a few drops at a time. We used Star Kay White brand, £3.99, from Waitrose; or try Nielsen-Massey, £5.99, from Lakeland.
