Warm Dairy, Egg and Nut Free Pancakes

It’s officially winter here in Chicago. The ground is covered in snow and the high today will be 19 degrees (if the sun stays out). I’ve lived in the Midwest my entire life and remember my mom making hearty and warm breakfasts on mornings like today. Let me be clear, I am no June Cleaver with an apron on whipping up fabulous breakfasts for my four kiddos. But sometimes it is just easier to make one hot breakfast for the kids and be done with it. It sticks with them longer, and I don’t get asked the “can I have a snack?” question at 7:45 a.m.

As many of us already know, our children with food allergies are limited to what kind of “hot” breakfasts we make for them because the boxed frozen versions of pancakes and waffles generally have allergens or are produced in a shared facility with allergens. Here is a flawless pancake recipe that you can easily double and whip up for busy mornings. Yes, I said busy mornings. From start to finish, it takes about 15 minutes. The best part is you can freeze the extras for another day. Enjoy!

DAIRY, EGG AND NUT FREE PANCAKES

 

2 c. all purpose flour

4 T. granulated sugar

4 tsp. baking powder

1 tsp. salt

2 T. water

4 T. vegetable oil

2 c. soy or rice milk

Dairy free cooking spray

 

Preheat a cast iron griddle pan on medium heat until hot preheat oven to 200 degrees. Meanwhile, in a large bowl combine flour, sugar, baking powder and salt with a wire whisk. In a large liquid measuring cup combine water, oil and milk. Pour water mixture into the dry ingredients and mix with a wire whisk until just combined. Do not over mix; lumps are fine.

 

Pour about ¼ c. of batter onto heated griddle and cook until small bubbles start to form on top. Flip and cook other side until light brown. Transfer pancakes to a warmed oven and repeat.

 

CHOCOLATE CHIP PANCAKES

Sprinkle 1 T. chocolate chips over the top of the pancakes after pouring batter on hot griddle.

 

BLUEBERRY PANCAKES

Add fresh or frozen berries on top of the pancakes after pouring batter on hot griddle.

  2. Amy I promise you that you will make these all the time, they are so easy and as as delicious as any pancake house recipe. I always double the recipe. Grease your griddle with a dairy free cooking spray each time you put more batter on. Another tip, use a cookie scooper to distribute perfect silver dollar shaped pancakes onto the hot griddle. I have a fabulous all purpose Sugar Cookie dough mix that I will post next. I am so glad you enjoy the recipes as much as I do!

  6. I am so happy you love them as much as we do. It’s funny, we make “Breakfast for Dinner” once a week, and this is always on the menu with some bacon or fresh fruit, maybe pan fried potatoes too if I have potatoes in the house.

    I made these for my family this morning. My 6 yr old daughter who HATES pancakes loved these. That’s sayin’ something!!! My husband and son loved them as well. This will be our go to pancake recipe for all eternity.

    I doubled the batch, and for my son who loves sweet potato pancakes, I added one 4oz jar of organic sweet potatoes to the batter. YUM!

    Thanks for saving me (in the future) from having to cook a different breakfast for my picky girl!!

  10. WOW! This recipe rocks! I have been searching for a dairy and egg free pancake recipe for over 6 months, tried modifying recipes, etc… this is the first one that just WORKS!     • Thanks so much Jackie! I LOVE this recipe, and am not kidding when I say I make it at least twice a week. One night we have it for Breakfast for Dinner, and the other morning (s) I make a double batch and freeze the leftovers in a resealable plastic bag for busy mornings before school. Even my own kids heat up their own pancakes now. So excited your family enjoyed it!

  16. I am so happy I found this website. You have literally brought me to tears. My son has a nut and egg allergy and I have a low tolerance for lactose intolerant. Before my son was born I ate mostly eggs, pancakes, and muffins for breakfast with my older son. Finding out my younger son was severely allergic to these foods turned my entire house upside down. My older son got angry in the super market when his favorite snacks like granola bars, cereals, and crackers with peanut butter were all off limits. My older son who is a picky eater became nearly impossible to please and I worried constantly about what to feed my kids and lived in fear of an allergy attack. I didn’t want my younger son to grow up feeling uncomfortable at family functions we have a large Italian family and he is the only one with allergies (and it is rude not to eat). I am so happy that I found your site, now he can grow up in a world that is safe for him and our family has options at food time instead of strictly fruits, veggies, and grilled meat. Thank you so much for adding snacks to our house.

  17. Thank you so much. I was so happy when I found your website. Finally recipes my son can sink his teeth into. My son is 13 and is allergic to peanuts and tree nuts, peas, beans and lentils, soy and eggs. It has been extremely difficult for all of us especially as I love to bake and my family loves to eat. It is especially hard for my older son as he has no food allergies and almost all snack foods, cakes, cookies, pancakes etc contain soy, eggs, nuts or are processed in a facility that has these products. I wish I had found this website sooner.
    A final thanks…..The Pancakes were devoured in seconds.

  19. We found out that our 3rd child is allergic to egg two days before her first bday. And just recently, we found out she is allergic to peanut. This was the first pancake receipe I have tried and all my kids loved it, even the non allergy kids. I have tried several other egg free pancake after yours but it didn’t impressed them. They all agreed that yours the best. So I just wanted to said thank you! Because of you, my daughter have her first taste of pancakes.

  23. I make these pancakes ALL of the time!!! I even mixed all of the dry ingredients so that I would have a pre made mix to take with us to a cottage rental last year. It worked out really well.

    We just throw the leftovers in the fridge and either pop them in the toaster, or just eat them cold, later!

    I first found this recipe in your baking book but I have 2 homes and don’t always have the book with me, so it’s nice that I can always find it here! I did buy a second copy of your book, but I gave it to my mom.

  24. Do you have a gluten free version of this recipe? My son is allergic to peanuts, tree nuts, wheat, milk, eggs, and shellfish and I would love to make these for him using a substitute for the all purpose flour.

  25. These sound delcious! One question though: My 1 year old daughter is allergic to eggs but is fine with whole milk. Since we dont normally keep soy milk in the house, can I replace this ingredient with whole milk? Thank you so much!

  26. I make allergy-free pancakes similar to these, except instead of vegetable oil I use dairy-free butter spread, such as Earth’s Balance. It gives the pancakes a nice buttery flavor without the dairy. I also use a combination of oil and Earth’s Balance in the pan – oil for crisp, ‘butter’ for flavor. Makes delicious pancakes!

    Not too sweet, not crumbly and the best part is that they have the right amount of “fluffiness” to them!
