Chipotle Lime Mayonnaise

Serve as a dipping sauce for sweet potato fries – Yum!

My favourite way to use this condiment is to dip store bought (from the freezer section) sweet potato fries in it. There are nostalgic days where I wish I could go out to the pub after work and have a beer and some pub snacks.  So when going out to a bar and sitting on the patio because a toddler’s bathtime is looming ahead of you, this is a good start to creating a pub night at home. Sweet potato fries are becoming ubiquitous at most sports bars and pubs around here and they are often served with a spicy dipping sauce. This is also great on burgers. I only make a small amount since it basically just mayonnaise. It took me long enough to get most of the baby weight off.

Keep in mind this is not the time to use lime juice from the bottle. You need the zest so that you get full flavour and if you add too much juice you will have a runny mess. Add more spice if you like it hotter.  You can get chipotle chili powder in most grocery stores now in the spice aisle.  An alternate you could use if you don’t like it hot at all, is smoked spanish paprika. It won’t be the same flavour, but that is kind of the point if you don’t like spicey heat.
Great for burgers and sweet potato fries
Ingredients
1/2 cup mayonnaise
1/4 tsp very finely grated lime zest
1/4 tsp chipotle chili powder
1/2 tsp fresh lime juice
How-to
In a small bowl mix all the ingredients together and stir. That is pretty much it.

This recipe easily doubles or triples if you need lots.
