Lemon Curd and Blueberry Cake

You might have guessed by now that I love cake, and that I love baking at home! And this lemon curd and blueberry cake isn't just an easy bake, but it's OH so delicious!

If you don't already want to bake it, you're going to want to by the time you've seen the photos and read how simple it is!

To make these slices of deliciousness, you'll need:
  • 180g butter
  • 110ml Greek yogurt
  • 2 tbsp lemon curd
  • 3 large eggs
  • 1 lemon
  • 200g self raising flour
  • 175g caster sugar
  • 200g blueberries
  • 150g icing sugar
Preheat your oven to 180 degrees Celsius and grease a cake tin.

Mix the butter, yogurt, eggs, lemon zest, flour, lemon curd and sugar in a mixing bowl or a Kitchen aid until they're smooth and nicely combined,

Then pour half the batter into your greased cake tin. Sprinkle a third of your blueberries evenly on top of the batter and then pour the rest of the batter on top. 

Then sprinkle another third of the blueberries on top.

Pop it in the oven! It should take about 40 to 45 minutes but make sure to check it after 40.

Meanwhile, mix the juice of your lemon and your icing sugar together so that you have a nice thick, white mixture that you can still pour.

Try not to play with it too much - I know I did!

Take your cake out when it's nice and golden on the top and it passes the skewer test

Leave it to cool in the cake tin.

Once the cake is completely cool, take it out the tin and pop it onto a nice place.

Spread the icing all over the top!

And then use the remaining blueberries to decorate!

All that's left to do at this point is to enjoy it!

  1. Tastes as good as it looks, I took what was left of it to the office and my colleagues gave it 10 out of 10, (and it didn't last 10 minutes).

  2. this looks delicious! Ive never really warned to blueberries but I think I could handle them cooked in things as its the texture for me rather than the flavour.

  3. It's so good, Laura! I highly recommend making it! You should be fine then, the blueberries go nice and squishy so the texture changes completely xx
