Thanks to all this steamy weather we’ve been having, we’ve got a hankering for some cooling summer cocktails. With that in mind, we paid a visit to Edinburgh bar and restaurant Badger & Co where General Manager, Mike, and Bar Manager, Struan, gave us a sneak peek of some of the bar’s brand new summer cocktails – coming to the menu soon.

Not Time For Bed Bager Co cocktail

Northside Jenny

Northside Jenny cocktail Badger Co

What you’ll need:

  • Gin
  • A slice of fresh orange
  • Lemon juice
  • Sugar syrup
  • Orange bitters
  • Fresh mint leaves
  • Ice

Method:

  • Measure one shot of gin into your empty cocktail shaker
  • Squeeze in the juice of your orange slice, followed by a shot of lemon juice
  • Add a little sugar syrup, as well as a few drops of orange bitters
  • Press three or four mint leaves in your hand to release the natural oils, before adding them into the mix
  • Fill the shaker up with ice and shake well to mix
  • Taste
  • Strain well into a martini glass
  • Garnish the side of the glass with more mint leaves

She’s Not Perfect, But Neither Are You

What you’ll need:

  • Dark rum
  • Peach schnapps
  • Strawberry and raspberry syrup, jam or crushed berries
  • Fresh mint leaves
  • Crushed ice
  • Fresh strawberries

Method:

  • Measure one shot of dark rum into your preferred glass or tin
  • Pour in a shot of peach schnapps
  • Add a spoonful of the strawberry and raspberry syrup, jam, or crushed berries
  • Drop in a few pressed mint leaves
  • Fill the glass or tin up with crushed ice and carefully mix everything together with a long spoon
  • Taste
  • Add more ice to finish, as well as straws, mint leaves and a slice of strawberry to garnish

It’s Not the Sort of Time for Bed

Not Time For Bed Bager Co cocktail

What you’ll need:

  • Vanilla vodka
  • Amaretto
  • Fresh raspberries
  • Lemon juice
  • Sugar syrup
  • Egg white, or chickpea alternative
  • Ice
  • Food colouring (optional)

Method:

  • Meaure one shot of vanilla vodka into a cocktail shaker
  • Add one shot of amaretto
  • Drop in about four fresh raspberries
  • Add a shot of lemon juice and a little sugar syrup
  • Pour in a separated egg white, or chickpea alternative
  • Pour the mixture over ice and shake well
  • Strain the mixture to remove all of the ice before shaking well again
  • Taste
  • Strain into a coupe glass
  • Decorate the top of the cocktail with a food colouring design, if you like
