The Queen scallops are fully deserving of their name with the combination of salty chorizo and sharp apple enough for the finest palette. The sharing Chateaubriand is not to be missed but certainly to be shared with what I can only imagine to be half a cow served up on a wooden block. While the crème brûlée and profiteroles are not to be missed make sure to save room for one of the Bluebirds famous cocktails that really cant be beaten. If you are looking for a reason to return to the toffs haunt this menu is it top drawer darling.

The all-day drinking and dining venue on Shaftsbury Avenue is buzzing with spice lovers and after my visit its not very hard to see why. Providing the perfect sized half-plate it is almost the Tapas of the curry world giving you more opportunity to let loose on a whole host of fantastic flavours. The Kochi Beef Fry and the Bohri chicken both provide the rich and warming flavours you would expect from your curry but the taste is on steroids. Absolutely stay for pudding, the traditional Kulfi is shunned in favour of a dish named Black Gajar Halwa black carrots with salted peanut brittle and easily one of the most moreish puddings I have had in months.

However, I can honestly say that their offering tops many of the crustaceans I have eaten in the world, let alone London. Fuss-free, buttery and fresher tasting than many I have enjoyed with an ocean view - seafood lovers the hunt is over. P.S. We loved the Aburi Sushi (flame seared) and Oshi sushi (flame seared pressed); they were super fresh and light but exploded with flavour. The Rib Eye with shiitake and yuzu sweet soya sauce literally melts in the mouth and the puddings are delicious; be sure to sample to mochi.

Makes 30 small pancakes
150g rye flour
100g wholemeal spelt flour
5g fresh yeast or ½ tsp dried yeast
300ml sour cream
50-100ml whole milk
2 medium eggs, beaten
50g butter, melted
1 tsp baking powder
½ tsp sea salt
150ml white wine vinegar
75g fructose (fruit sugar) or 100g caster sugar
Smoked salmon slices
Crème fraîche
Mix the flours with the yeast, sour cream and 50ml of the milk. Cover and set aside for an hour. Place the sugar and the vinegar in a saucepan along with 75ml water and simmer, allowing the sugar to dissolve. Remove from heat, add the thinly sliced fennel to this mixture and cover. Add the beaten eggs, melted butter, baking powder and sea salt to the bowl with the flours, yeast and sour cream. Stir thoroughly and prepare a skillet with a little oil over a medium heat. Start frying small pancakes for a minute or so before flipping. Assemble salmon slices on each piece, followed by a dollop of sour cream or crème fraîche.
Serves 2
4 slices of Norwegian smoked salmon
1 handful of freshly shelled peas
1 shallot, finely chopped
Juice and zest of 1 unwaxed lemon
2 tbsp of oil
1 avocado
2 slices of rye bread
Salt & pepper
Place the shelled peas in a bowl and add the finely chopped shallot. Mix together the lemon zest and oil and season to taste with a little salt and pepper. Toss the peas and shallots in this dressing and set aside for about 30 minutes before you prepare the open sandwiches. Slice open the avocado and cut segments to place on the rye bread. Fold the Norwegian smoked salmon on top of the avocado and then scatter the pea and shallot mixture on top of the salmon. If you have any fresh pea tips and shoots then add those as an extra garnish, or use a herb of your choice. Borage, parsley, chive and mint all work well with this tasty and healthy summer sandwich.
Serves 4
Juice and zest of 2 small limes
3 tbsp tamari soy sauce
3 tbsp sweet chilli sauce
1 tsp wasabi paste or powder
1 large garlic clove, finely chopped or crushed
1 large piece of ginger, finely chopped or grated
4 individual salmon fillets, skin on
2 bunches of asparagus
1 punnet shiitake mushrooms
2 tbsp vegetable oil
225g rice noodles
1 extra lime for the stir-fry
1 bunch spring onions, chopped
Sesame seeds for garnish
mix together the lime zest and juice, the tamari soy sauce, sweet chilli sauce, wasabi, garlic and ginger. Toss the salmon fillets in the marinade. Cover with clingfilm and refrigerate for 30-45 minutes. Preheat the oven to 180. Place the fillets in an ovenproof dish and drizzle the marinade on top. Roast in the oven for 15 minutes. Meanwhile stir-fry the vegetables and cook the noodles. Serve with salmon on top.

1 whole Norwegian salmon (approx. 2 kg.), descaled, gutted
75 g butter
2 small red onions, thinly sliced
2 unwaxed lemons, thinly sliced
1 large carrot, thinly sliced
A bunch of fresh parsley
Herbamare (sea salt with herbs)
2 butternut squashes
2 bunches of kale
2 pomegranates, shucked open and de-seeded
Preheat the oven to 150C. Butter two aluminium sheets. Place one sheet on top of the roasting tray. Wipe the salmon dry and make three incisions into each side. Stuff all six incisions with a piece of red onion, lemon, fresh parsley and carrot. Close the salmon and sprinkle with a little lemon juice. Place the second sheet of foil on top of the salmon and crimp the edges inwards to create a parcel. Once sealed, place the salmon in the oven and roast for 1 ½ - 2 hours. Chop up the squash, place them on an uncovered tray and place in the oven for 30 minutes. Finely chop the kale and add this to the pomegranate seeds.
Serves 4
8 slices of Norwegian smoked salmon
4 slices of toasted sourdough or rye bread
2 avocados
Juice and zest of 1 unwaxed lemon
1 bunch of dill
4 tbsp creme fraiche
1 small batch of cucumber pickles
Slice open the avocado and cut segments to place on the sourdough or rye bread. Fold the Norwegian smoked salmon on top then scatter the dill, squeeze some lemon juice on top and garnish with creme friache. For the pickled cucumber:
150ml white wine vinegar
100g fructose (fruit sugar)
1 cucumber
Place the white wine vinegar and fructose together in a saucepan and warm through until the sugar dissolves. Allow to cool. Finely slice the cucumber and place in a deep bowl and add the cooled vinegar solution. Pickle for about 1 hour before serving with the salmon.

1 medium white onion, finely chopped
2 medium, waxy potatoes
1 small celeriac, peeled and quartered
1 bunch of chives
500ml chicken stock (or stock of your choice)
4 individual salmon fillets (skin on)
1 tbsp vegetable oil
1 broccoli or 1 packet of tenderstem broccoli
Handful of toasted almonds or almond flakes
1 unwaxed lemon for wedges
Preheat the oven to 190C. Sweat the onion in 1 tablespoonful of vegetable oil. Cut the potatoes and celeriac in 5mm slices and lay a third of the slices on the bottom of the dish and spread some of the onion and chopped chives on top, repeat the process until you have filled the dish. Pour in the hot stock until it covers all the vegetables and cook for 45 minutes to 1 hour. Meanwhile place a large sauté pan on the hob and drizzle a spoonful of vegetable oil. Heat until the oil pop the fish fillets skin side down. While youre cooking the salmon pop the broccoli in a pan with boiling, salted water and cook for a couple of minutes.
