Knowing this, i listened open-mouthed while "Call me Max", a newly arrived traveller, set out to enlighten his fellow guests on the delights of Asian cuisine.

"Now take this hotel", he announced to the table at large. "Don't try to tell me this is real Indonesian food. I've been in Indonesia now for two full weeks, think i don't know? Why, they don't even put enough spices in their cooking. And what's the matter with them not serving sambal? Asian food's just garbage without sambal."

Spurred on by Max's loud-voiced complaints a bar boy went scampering to the kitchen, to return with a bowl of sambal.

One guest, only, felt sufficiently underspiced to share the sambal, and he, gasping and coughing, hastily left the table - not to reappear until next day, when he announced: "Man,. that sambal is sure a sauce with a difference. Last night 1 read the first three pages of may book merely by berathing on it. Reckon if it'd been one of those little paperbacks, it would have caught fire."

in Bali we must point out a very important distinction which the Balinese make between two clearly separate groups of ancestors. The first of these groups consists of the dead who are riot yet completely purified. This group is in turn subdivided in pirata, those riot yet cremated, and pitara, those already cremated. The former are still completely impure; the latter have been purified, but are still considered as distinct, individual souls. The second group consists of the completely purified ancestors who are considered as divine.
No contact is sought with the pirata, the dead who have not yet been cremated. Oil the contrary they are dangerous, Offerings must however be made for the redemption of their souls.
