Not for nothing was Sana a relative of Penestanan's famous betutu-cooking priest. Thrusting the dish swiftly back at the n startled guest, he stated flatly: "Too much food here in hot' already. Better Ibu take back to Denpasar."

Now was not the time for finesse. I grabbed the duck, dish and all, and tucked in under one arm - motioning Sana away with the other. Minutes later, my visitor drove out of the courtyard, and Sana reappeared.

"Here," I said, forcing the duck into his reluctant hands. "What you do with this is between you and your maker, but never let me see it again."

The sequel I heard next day. Back at his village Sana's family inspected the remains and passed judgment - not only was it inedible, it was not even a duck, but an old gander. This being sol' there was but one solution - simmer until soft.

And so it came to pass that a "duck" from Denpasar found its way into a cooking pot in Penestenan - the very core of Bali,s, Betutu Belt.

in Bali we must point out a very important distinction which the Balinese make between two clearly separate groups of ancestors. The first of these groups consists of the dead who are riot yet completely purified. This group is in turn subdivided in pirata, those riot yet cremated, and pitara, those already cremated. The former are still completely impure; the latter have been purified, but are still considered as distinct, individual souls. The second group consists of the completely purified ancestors who are considered as divine.
No contact is sought with the pirata, the dead who have not yet been cremated. Oil the contrary they are dangerous, Offerings must however be made for the redemption of their souls.
