MAKING LIQUOR
SUPER YEAST-$4.95-
A new single-pouch high alcohol kit that produces 6 gallons of 40 proof (20%abv) alcohol base in just 10 days.  It works by fermentation of a special distiller's yeast and nutrients. Ingredients: high alcohol distiller's yeast, diammonium phosphate, yeast nutrients, trace vitamins and minerals.

Equipment
  • 6.5 gallon Fermenter Pail
  • Hydrometer
  • Thermometer
  • Plastic Mixing Spoon
  • One Step Sanitizer
  • Ingredients
  •  6 gallons Bottled Spring Water
  • 18 lbs. Corn Sugar 
  • Isinglass Fining Agent
  • Assemble equipment and 18 lbs of granulated sugar. Use only plastic food grade items.
  • Sterilize all equipment with a sterilizing solution such as One Step.
  • Mix 18 lbs .of sugar into 3 gallons of hot water until all sugar dissolves. Gradually add cold water to make 6 gallons.
  • Ensure the mixture temperature is between 80-90°F. Pour the contents of the SuperYeast pouch into the solution and stir for 1 minute.
  • Ferment between 70-80° for 8-10 days or until the Specific Gravity drops to below 0.990. For best results keep the temperature constant.  A consistent temperature is critical in the fermentation process.  Use a Brew Belt if necessary.  Do not allow the temperature to rise above 90°F otherwise fermentation will cease.

  • Clearing - Due to the special yeast strain used, the mash will not clear naturally. To clear the mash, one of two methods is recommended.  The most effective means of clearing is the addition of Isinglass Fining Agent. The fermented mash may also be cleared using a wine filter such as the Mini Jet™ with sterile-grade wine filter pads.
  • Charcoal Filter - To make homemade liqueurs or liquors, it is recommended to use charcoal filter pads or activated carbon to remove any remaining unwanted volatiles, purifying the taste of the finished liquor.
  • Flavor the finished alcohol with your favorite liqueur or liquor extract. For best results use LIQUOR QUIK™ brand, 100% natural essences. To make a quick party punch, add the fermented mash directly into your favorite mixture of soda and/or fruit juices.

  • LIQUOR QUICK IDEAS
    You can use Liquor Quick Essences to flavor and enhance all types of foods. Here's just a few ideas.
    Specialty Beers Add 1 bottle of selected essence to the secondary fermentation. Use Mexican Coffee to make kyber beers or Scotch Honey Whiskey to make honey lagers.
    Specialty Coffees Add a few drops of your favorite essence to a mug of strong French or Italian roast coffee.
    Syrups & Italian Ice Combine 2 cups of sugar in 1 cup of boiling water. Add 1 bottle of your favorite essence and 1 fl.oz. of glycerin. Use as a topping on crepes, pancakes, waffles, french toast, puddings and cakes. Refrigerate any unused syrup.
    Fancy Desserts Add a few drops of your favorite essence as an ice cream, fruit  salad or sautéed fruit topping. Add a few drops of your favorite essence to your recipe of homemade cookies, fudge, cake or chocolates.
    Ice Cream Add a few drops of your favorite essence to homemade ice cream just before you start the ice cream maker.
    Sauces & Glazes Add a few drops of essence or a few ounces of premixed liqueur to your favorite sauce or glaze. Highly recommended for de-glazing the pan of grilled venison, poultry or lamb.
    Fondues Add a few drops of your favorite liqueur essence to cheese or chocolate fondue.
