If you don't have a food processor you could consider investing in a hand blender as they are much cheaper and fine for simple dips, sauces, soups, smoothies and babyfood. Shop around, wait for sales or special offers!

 

 

Simple Mayo

An easy way to make mayo.

Ingredients:

3 cups of soya milk

1 cup of light vegetable oil

a little vinegar (about a tablespoon)

optional extras: a garlic clove, half a teaspoon of chilli or curry powder, herbs

salt (optional)

Place the soya milk in a liquidiser and start machine - add any of the optional extras ie. Garlic for garlic naise. Slowly add the oil while blending. Once it is all well blended add the vinegar (this will thicken the mixture instantly) and switch off the machine. This makes one very large jar, which will keep in the fridge for a few days - reduce the amounts if you wish.
