Cooking Substitutions

bullet1 cup of butter -> 7/8 cup polyunsaturated oil OR
bullet1 cup of butter -> 1 cup margarine 
bullet1 cup of heavy cream -> 1 cup evaporated skimmed milk
bullet1 egg -> 2 egg whites
bullet2 egg yolks -> 1 whole egg
bullet1 ounce baking chocolate -> 3 tablespoons cocoa powder and 1 tablespoon polyunsaturated oil
bulletSour Cream -> Low-fat yogurt
bulletWhole milk -> Skim milk
bullet1 cup buttermilk or sour milk -> 1 tablespoon white wine vinegar or lemon juice stirred into 1 cup milk and allowed to stand for 5 minutes
bullet1 cup milk -> 1/2 cup evaporated milk plus 1/2 cup water
bullet1 teaspoon baking powder -> 1/4 teaspoon baking soda plus 1/2 teaspoon cream of tartar
bullet1 teaspoon cornstarch -> 2 tablespoons all-purpose flour
