Build Your Own Potato

Baked potatoes have endless possibilities with Light Sour Cream and a variety of toppings.

4 medium baking potatoes, washed, each pierced with a fork
  1. Place potatoes on paper towel in microwave. Microwave on HIGH, turning over after half the time, until fork tender (15 to 18 minutes).

Makes 4 servings.

VARIATIONS:

Mexican Chicken Potatoes: Melt 1 tablespoon LAND O LAKES® Butter in 8-inch skillet; stir in 1/2 cup chopped onions. Cook over medium-high heat, stirring occasionally, 1 minute. Stir in 2 cups shredded cooked chicken, 1 cup LAND O LAKES® Light Sour Cream and 1/2 teaspoon dried basil leaves. Continue cooking, stirring occasionally, until heated through (1 to 2 minutes). Top each potato with about 1/2 cup chicken mixture and 2 tablespoons salsa. 4 servings.

Dill 'N Vegetable Potatoes: Prepare 2 cups frozen vegetable combination according to package directions. Drain; stir in 1/4 teaspoon dried dill weed. Top each potato with 1/2 cup vegetables, 2 tablespoons LAND O LAKES® Light Sour Cream and 1 ounce (1/4 cup) LAND O LAKES® Mozzarella Cheese, finely shredded. Microwave on HIGH until cheese is melted (1 to 2 minutes). 4 servings.

Cheesy Ham & Broccoli Potatoes: Prepare 2 cups chopped frozen broccoli according to package directions. Drain; stir in 1 cup cubed ham. Microwave on HIGH 1 minute. Top each potato with about 3/4 cup broccoli mixture, 2 tablespoons LAND O LAKES® Light Sour Cream and 1 ounce (1/4 cup) LAND O LAKES® Cheddar Cheese, finely shredded. Microwave on HIGH until cheese is melted (1 to 2 minutes). 4 servings.

Italian Cheese Potatoes: Top each potato with 1 ounce (1/4 cup) LAND O LAKES® Cheddar Cheese, finely shredded, 2 tablespoons LAND O LAKES® Light Sour Cream and 2 tablespoons spaghetti sauce. Microwave on HIGH until cheese is melted (1 to 2 minutes). 4 servings.

TIP: Serve potato toppings over pasta for a recipe variation.

TIP: Potatoes can be baked at 350°F for about 1 1/2 hours or until fork tender.
