Low calorie recipes with chicken, orange and wine, spinach with rice
Taken out of my low calorie recipes collection, the following dish will satisfy your palate but will not supply your body with a lot of fat, because the delicious sauce consists of mainly wine and orange.
Chicken with orange and wine
Ingredients:
- 1.5 kg. chicken cut up into serving pieces
- 1½ tbsp. flour
- 3 tsp. salt
- ½ tsp. pepper
- 70 g. pure olive oil
- 125 g. (½ tea cup) white wine
- 125 g. (½ tea cup) pure orange juice
Preheat the oven to 180-200 C. (medium). Season the chicken pieces with the flour, salt, and pepper. Heat the olive oil in a pan and fry gently and rapidly on all sides for 2-3 minutes. Place the chicken in a heat-proven dish and remove the pan from the hot ring. Add the wine and orange to the pan while the pan is still hot, mix it with the remaining oil and pour the sauce over the chicken. Cook in the oven for 1½ hour or less, basting it frequently with the sauce. Serve with spinach and rice (see recipe below)
Spinach with rice
A tasty low calorie recipe that can also be prepared without any oil for low calorie consumption. Vegetarians may add it in their vegetarian recipes book.
Ingredients:
- 2 kg. spinach
- 3 dry onions (medium size) grated
- 5-6 fresh onions cut up into 1 cm. pieces
- the juice of one lemon
- 120-130 g. (3/4 of a tea cup) rice
- 100 g. pure olive oil
- 2 tsp. salt
- ½ tsp. pepper
Stem the spinach, wash it very well and drain it. Cut it in pieces if you like. Grate the dry onions and cut the fresh ones in pieces. Place the onions at the bottom of a very large casserole and add the spinach on top. You may have to wait until the spinach is reduced if a portion does not fit into the casserole. Do not add any water and cook over low temperature so that it doesn't stick (stir frequently). The spinach is high in moisture and will give it off readily. When it is reduced and can be managed, add all the other ingredients, mix well and let the food boil, always on low temperature, until the rice is cooked but still a little hard.
Never forget that even if you use low calorie recipes, if you consume large quantities of food you will never lose weight. Quantities absorbed must be reduced and to make sure you stay healthy and strong while dieting, add top quality nutritional supplements - vitamins, antioxidants to your daily diet. | | | |
